Harissa
Arabic:
harīssa

Sauce making up the most important ingredient in Tunisian cuisine.
Harissa, made from peppers and tomatoes, is produced in Tunisia, and most of the time sold in cans. Harissa is especially known for its combination with couscous, making Tunisian Couscous red and hot different from couscous in other North African countries.
Harissa is also frequently used with pasta, as Tunisia is strongly influenced by its close Italian neighbour. A third dish for which Harissa has become indispensable, is sandwiches.
