LIXUS:
The garum factories

Lixus, Morocco

Garum is not really all that important in Mediterranean cuisine anymore, to say the least. Garum was a salty paste made from intestines of anchovy, and put into specific jars.
The factories of Lixus are quite impressive and covers an area of several hundred square metres.
